Family Secret Tomato Sauce

4 large onions chopped
1 cup dried basil or 2 1/2 cups of fresh
1/2 cup of honey
4 TBS of dried oregano
3 TBS salt
2 TBS ground lemon peel
2 TBS thyme
2 TBS garlic powder, or more
2 TBS dried parsley
2 teaspoons of pepper
2 teaspoons of cinnamon
1/ 2 teaspoon of nutmeg This recipe is a wonderful way to use the bounty of summer tomatoes. It is reprinted from Animal, Vegetable, Miracle by Barbara Kingsolver.
If you can this salsa follow the recipe closely to maintain the proper PH. If you freeze the sauce, other vegetables such as peppers or eggplant can be added. This makes 6 to 8 quarts of sauce to be used with pasta, in stews or Mexican dishes.
Soften the onions in a 3-gallon kettle. Use a bit of water not oil, if you are canning this recipe. Add the puree and all of the seasonings, bring to a boil. Simmer on low heat for two to three hours until it thickens. Stir frequently.
Prepare jars and canner (hot water bath works with tomatoes) or freezer containers. Add 2 TBS of lemon juice- very important if canning. Ladle into jars leaving 1/ 2 inch headspace for canning jars, more for freezer.
Process for 35 minutes.
