Caramelized Onions

Slice 6 – 8 onions, thinly Heat two tablespoons of oil in a heavy skillet over low heat.
Add onions and stir occasionally, keeping heat low to medium low for about 10 minutes.

Sprinkle on a bit of salt and continue to cook slowly for another 4 or 5 minutes.
Drizzle with 2 – 3 tablespoons Soy Sauce.
Continue to stir over low heat until dry, limp and browning.

This sweet and savory condiment is good on fresh bread or as a side with meat, beans or fish.
