Almond Sprout Salad

Dressing:
1/8 teaspoon salt
1 garlic clove, peeled and chopped
1/4 cup extra-virgin olive oil
1/2 teaspoon Dijon mustard
ground pepper to taste
Make dressing: add salt to crushed garlic and mash with a fork. Add the oil, vinegar, mustard and pepper. Whisk together until creamy.
Salad:
1 medium head lettuce
1 to 2 cups spinach
1 cup baby red chard
or 1 cup mixed greens
1 cup assorted sprouts
1 cup almond sprouts
or 1/2 cup sliced or slivered almonds
Make salad: Wash and dry lettuce, spinach and chard. Tear leaves into bite-sized pieces and place in a large bowl. Sprinkle with spouts and nuts. Add dressing and toss. Can be garnished with nasturtium leaves and flowers.
