Welch Farms Fresh Strawberry Pie

3/4 c sugar
2 T cornstarch
1 c water
1/2 t salt
1 quart fresh Welch Farms Strawberries
1 small package strawberry gelatin
9 or 10 inch pie shell (regular or graham cracker is fine)
Whipped Topping Mix together: sugar, cornstarch, water, and salt. Boil until clear and thick. Remove from heat and add gelatin. Cool to about room temp. Add whole rinsed and capped strawberries. Toss to coat berries. Let stand 10 minutes. Fill pie shell and chill thoroughly.

Serve with whipped cream.

Strawberry Selection

* Berries should have a full red color, bright luster and firm, plump flesh.
* Choose fully ripe berries. Strawberries do not ripen after being picked.
* The caps should be bright green, fresh looking and fully attached.
* Berries should be dry and clean.
* Avoid berries with large uncolored or seedy areas or those with a dull, soft look.

Preparation & Storage

* Use strawberries as soon after purchase as possible.
* Take berries home immediately after purchase. Store in the refrigerator immediately. For longest shelf life, remove the berries from their market or store container. Leaving the caps on the berries, sort and gently arrange them in a single layer on a cookie sheet or other shallow container.
* Just before serving, wash them in gently flowing cold water in a colander. Drain and remove caps by giving them an easy twist with a strawberry huller or sharp knife.
