Garlic Scape Pesto

1 c. good olive oil
2 c. grated parmesan cheese (fresh if possible) In a blender, combine the scapes and olive oil. Pour mixture into bowl and blend the cheese in by hand. I oven roast the scapes first for a milder richer flavor. Just place on cookie sheet (sides required!), drizzle with some olive oil, and roast in 400 degree oven until soft to touch. Then blend.
