Pumpkin Roll

Preheat oven to 350. Grease and flour jelly roll pan.

Combine:
3 eggs
1 c. sugar
1 tsp. pumpkin pie spice
1 tsp. baking powder
3/4 c. flour
2/3 c. pumpkin

Mix well. Pour onto jelly roll pan. Bake for 15 min. The sides of the cake should just start to pull away from the pan. Let sit for 5 minutes.

Sprinkle powdered sugar on a dish towel and flip cake onto towel. Let cool for 3 min. Roll up tightly beginning at narrow end. Let cool completely.

Mix:

1 tsp vanilla
2 T butter
8 oz. cream cheese
1 c. powdered sugar

After cake is completely cooled, unroll and spread filling onto cake. Re roll and wrap in wax paper and then aluminum foil. Chill several hours in refrigerator or can be frozen.
